Beef & Mushroom Soup

I grew up in the Appalachian mountains of Maryland and this creamy beef & mushroom soup was a dinner staple passed down from my father’s family. I put my own twist on it with as many purple veggies as I could find and it gave it an extra earthiness and aesthetic flare. So excited to share more recipes from my multicultural upbringing!
